The gym plate

Chicken, rice, broccoli. Again. Here's how to make it taste good.

You picked this plate because it works - the macros, the cost, the fact you can cook five of them on a Sunday. Nobody picked it for the taste. That part is fixable, and it doesn't mean drowning it in sauce.

Why the plate reads bland

Two reasons, and neither is your cooking. First: your tongue reads six tastes - salty, sour, pungent, bitter, sweet, astringent - and plain chicken with rice and broccoli delivers about two of them. A plate carrying two of six reads as bland no matter how well you grilled the chicken.

Second: repetition. The same plate five days running dulls even a good seasoning job - by Thursday the box you were proud of on Sunday tastes like an obligation. Any real fix has to survive being eaten on repeat.

Five fixes, honestly compared

Acid

A squeeze of lemon or a splash of vinegar over the finished plate.

The single biggest lever most home cooks never pull. Brightens everything, costs nothing. You do need the lemon in the house, cut, every single day.

Heat

Fresh chilli, chilli flakes, or a proper hot sauce.

Pungency wakes a plate up. But most hot sauces smuggle sugar and vinegar-sweetness back in - read the label on the one in your fridge.

Fresh herbs

Coriander, spring onion, parsley - chopped over the top.

Transforms the plate. Also wilts by Wednesday, which is exactly when your meal prep needed it most.

Sauce

Soy, sriracha, mayo-based anything.

Works instantly. Also turns your 450-kcal plate into a 650-kcal plate and soaks the rice - the two things you cooked this way to avoid.

One sachet

Or Pranasalt: salt plus six spices, torn over the plate in one move.

The four tastes the plate is missing, nothing artificial, about 0.2 kcal. Works the same on day one and day five of the prep.

Make it a system, not a struggle

Cook the prep exactly as you already do - plain, in batch, salted lightly for texture. Do all the flavour work at eating time, on the plate in front of you. Seasoning added on the day doesn't soak, doesn't sog, and lets the same five boxes taste like five different meals.

We've written the method up properly on the meal prep page, and the plain chicken and broccoli and steak and chicken bowl recipes show it on real plates. If you're wondering what a natural flavour enhancer actually is, that page has the full method.

Why does chicken and rice taste so bland?

Your tongue reads six tastes; plain chicken, rice and broccoli deliver about two. However well you cook it, a plate carrying two of six reads as bland. The fix is completing the missing tastes - sour, pungent, bitter, salty - not cooking harder.

What is the best seasoning for chicken and rice?

For a clean plate, season at the end, not in the pot: salt plus something sour (lemon, amchur), something pungent (chilli, mustard) and something with bitter depth (fenugreek). That combination is exactly what a Pranasalt sachet carries - one gram of Himalayan pink salt with six culinary spices.

How do I stop hating my meal prep by Thursday?

Palate fatigue comes from sameness, so vary the finish, not the cooking. Prep the same chicken and rice, then finish each box differently on the day - lemon one day, chilli the next, a sachet the day after. Sauces soak in overnight; dry seasoning at eating time doesn't.

Should I season before or after cooking?

Salt the chicken before cooking for texture, but do the flavour work on the finished plate. You season what you actually eat, the dose stays consistent, and the prep boxes don't go soggy.

Is Pranasalt just salt?

No - it's a natural flavour enhancer. The salt is the carrier: 95% Himalayan pink salt, 5% spices - chili, fenugreek, amchur, mustard, asafoetida, sesame. The spices are the point; they bring the tastes the plate is missing.

What does it cost per plate?

One sachet seasons one cooked dish. The one-time 150-sachet box works out at about €0.57 (roughly 49p) a meal; the monthly subscription at about €0.46 (roughly 39p). Cheaper than the hot sauce habit it replaces.
